Tips

  • Metal skewers become very hot.
  • Keep raw marinade away from cooked kebabs.

Substitutions

  • Use chicken breast and check it early.
  • Use courgette chunks instead of pepper.

Storage

  • Get perishable Chicken kebabs into the fridge within two hours, or within one hour above 32°C / 90°F. Eat Chicken kebabs within two days, keeping it covered at 4°C / 40°F or colder.
  • Bring cooked Chicken kebabs to 74°C / 165°F, stirring or turning it for even heating. When Chicken kebabs is part of the meal, serve cold salads, dips and chilled desserts straight from safe refrigeration.
  • If Chicken kebabs includes a thick sauce or soup, loosen it with a little water during gentle reheating. Any crisp coating on Chicken kebabs becomes softer in storage.

Make ahead

  • For Chicken kebabs, keep the chicken in its marinade in the fridge one day before cooking.
  • Cut vegetables ahead; thread shortly before grilling.
